I was determined not to leave my apartment today but was presented with the problem of procuring ingredients to the raspberry muffins I was equally determined to make today. All of the raspberry muffins on allrecipes.com contained one ingredient of another that I was short of or did not have such as buttermilk, 2 eggs, 1/2 cup of butter, half-and-half etc.
I almost resorted to venturing out but then LO! I read the comments on one of the recipes (http://allrecipes.com/Recipe/Lemon-Raspberry-Jumbo-Muffins/Detail.aspx) and saw that she had substituted buttermilk with coconut milk. A light bulb went off in my head: I TOTALLY had coconut milk powder. It figures that I have the most obscure ingredient. And then on this nifty web page http://www.garvick.com/recipes/sub.htm, I found out how to skirt around the last egg. Woo hooooooo!
Anyway, it was my first baking experience in the new apartment with the electric oven and I am very pleased with the results! The raspberry-coconut muffins are delightful! Party in the mouth!

| Hey! Happy EPAnniversary to me. On Tuesday. It is mighty hard to believe it's been one year. Does not feel like it at all. I celebrated by going on a field trip, only to discover yesterday that some insect had taken a fancy to my flesh. It may be a skeeter, it may be a flea. Whatever the bug, the itch is quite intense. Not chigger-intense, but close. Whyyyyyy????? I watched an excellent documentary on Dr. Bronner, Dr. Bronner's Magic Soapbox. I'm glad I support such an ace company, regardless of whether or not Dr. Bronner was a madman or a genius. Kinda like that John Brown argumentative essay we had to write in 8th grade. And I have a new hobby. Drop spindling. I'm that much closer to being a grandma on the homestead. | | |
| Today is my 23rd birthday. It marks the first birthday of my whole life that I haven't spent with my parents. I am a prime number, the last one being 4 years ago. I was greeted this morning with the news that Aung San Suu Kyi was found guilty and will be in prison for up to 18 months, a "softer" sentence than 3 years of hard labor, as was originally decided. Doesn't quite put anyone in the birthday mood. I hate this helpless feeling that comes over me whenever I read about Burma. I wish there was something I could do. There. That's my 23rd birthday wish. Freedom for Burma. I know you aren't supposed to let anyone know, but in this case, the more people who know, who are educated about Burma issues, the greater possiblity for change. | | |
